Marshmallows are a key component of ANY campsite. As well as graham crackers and chocolate.
I don't know if you're bringing a cooler or not, but if you are, freeze a bunch of meat in a ziploc baggie and chuck it in the cooler with a bunch of ice. Maybe bring some skewers or something to cook it over a fire...
Bring aluminum foil, it makes it easy to cook in the coals of the fire, like potatos or something.
got a dehydrator? I have this cookbook and the recipes look great, though I haven't had a chance to try them as they're meant to be done (dehydrated and packed).
My favorites while camping: curried spinach black beans & brown rice (corn tortillas, cheese, sour cream all excellent) grilled marinated veggies (don't forget the broccolini!) foil meals (potatoes and onions make me happy) grilled/roasted garlic grilled mushrooms
And for convenience, Tasty Bite boil in the bag meals are awesome. We start the water to boil, mix up some cucumber raita, and use ready-to-eat pappadums.
Tin foil dinners! You can make different varieties so you don't get bored. Just keep them in a cooler in a ziploc baggie til you're ready to cook them.
