I catered a dinner party for 15 people yesterday....food was divine, weather was perfect....

i am going to make it again soon and as SOON as i make it i PROMISE to write it down....i just threw it together actually....but i need to not do that because it turns out great and then i don't have it ! :P

are you a "fly by night" cook ?

it's pretty easy: radiattore (cooked very al dente), lots of cheese (pepper jack, smoked gouda and parm reggiano)....enough to cover the noodles to where you think, "jeez this is a LOT of cheese !" (but really it's not). there is also heavy cream. add the heavy cream AFTER you add the cheese. add enough cream until it's VERY wet but not soupy. salt and sepper.

i added a bunch of sweet roasted Anaheim roasted chilies....making it smokey and delicious. i topped with panko crumbs.

bake at, ohhhh say 350 for about 25 minutes ? it will start to bubble and you want it a bit brown.

if you're worried that it won't set, pitch in a whisked egg when the noodles are cold. it will help it set.

(the reason i add the cream after the cheese is because i want the cheese to stick to the noodles)
