Pepperoni and sausage

I made pepperoni and some sausage because the stuff you buy in the store has stuff in it that doesn't agree with me.  I used my Jerky works gun.



1 pound ground beef
1 1/2 tsp tender quick
1 tsp liquid smoke
3/4 tsp pepper
1/4 tsp pepper flakes or cracked black pepper or both combined
1/4 tsp garlic powder

Mix thoroughly make into logs (I used my jerky works gun) 
Cover with wax paper or plastic and refrigerate over night.
Bake on a rack or boiler pan for 4 hours at 200 F.

Sausage recipe
1 1/4 pounds ground pork
1 pound ground beef
(I excluded the 1/4 pound of pork fat)
1  ounce sea salt (a little less than a 1/4 cup)
1/2 ounce tender quick (6 or so tsp)
1 1/2 tsp pepper
1 1/2 tsp marjoram
1 minced garlic clove
3/4 cup boiling water
1 tsp liquid smoke

In the boiling water add garlic, salt and tender quick stir until dissolved, let stand.
Mix meats, pepper, marjoram and liquid smoke.
soak casings in hot water.
Strain water mixture into meat mixture and mix well.

Using the jerky works gun or other sausage stuffing methods make sausages.
Bag and let sit in refrigerator 24 hours before freezing.
