I decided to try and make some of those three layered sandwich candies like the andes mints, seems simple enough so I melted a couple pounds of chocolate coating and spread it out nice and thing, then the same in white chocolate coating but figured I could add a couple tbls of creme de menth for color and flavor, I thought that since it was coating and not actual chocolate it would be a bit more forgiving with the whole turning to stone when you add liquid thing but apparently not, 3 tblsp later I had 2.5 lbs of greenish cement. In the end I just added cream to it and made a sort of ganache to use as a center for dipping so it turned out ok I guess. But I still have the issue of how to flavor the white chocolate for the middle layer of my candies. Anyone have some tips?
