Cranberry Chutney
Do this at least a day before you feast!
boil 1 cup brown sugar in one cup water. Oh, and you better be doing this in a non-reactive pot!
Add 1 stick cinnamon
6-8 cloves
6-8 berries of allspice
(throw the cloves and allspice in a tea-ball so you can fish them out at the end!)
2 tablespoons crystallized ginger (if you can use the ginger that's been soaking in rum for several months for cordial-making...)
1/2 cup apple cider vinegar
1/2 cup raisins
1 medium apple, peeled, cored, and cut into pieces
12 ounces (one bag) of cranberries
Bring it back to a boil, then back it down to a simmer until all of the berries have popped.
Cool it down, cover with a layer of plastic directly on the surface, then pop into the fridge.
Sorry, it isn't very photogenic...
