gingerbread waffles

My house went to a Halloween party last night so to round out the Octoberyness of it all, I made gingerbread waffles this morning.
The origin of the waffles: My sweetie and I were looking at going to a bed-and-breakfast on the coast as a treat and were cruising the options. One place offered gingerbread pancakes, which sounded divine, but the B&B itself was far too doilies-and-chintz and we ended up not taking the trip anyway, so there was only one thing to do: make the pancakes at home. I started with a recipe from www.lanierbb.com, to give credit where due, but it needed work. I think I've got it in good shape at this point, and it works for pancakes or waffles.

Gingerbread Waffles:

2 cups whole wheat pastry flour (or one cup each white and whole wheat, or 2 c spelt flour)
1/2 tsp salt
1 tsp cinnamon
1/2+ tsp ginger
1/2 tsp nutmeg
1/2 tsp cloves
2 Tbsp brown sugar

1/2 cup molasses
2 eggs, beaten or 2 Tbsp tapioca flour+2 Tbsp water, mixed well
2 Tbsp butter or margarine, melted
1 1/4 cup warmed/room temperature milk or soymilk

1 Tbsp baking powder

Start waffle iron heating. Mix all dry ingredients except the baking powder. Mix all wet ingredients separately. Add the wet to the dry, stirring thoroughly but gently, then stir in the baking powder. Cook the same way as ordinary waffles or pancakes. The waffles won't crisp in the waffle-iron, but do so once set on a plate or rack.
