Long time lurker, first time poster here. :)
I was at my wits end what to make for dinner tonight, and after looking at the sausage recipes here on
food_porn, I found
this post by
arielladrake and thought, "Hm, that looks good!"
Except I have a knee jerk reaction to rice after a poor week when all I had to eat was boiled rice and apricot jam. So I thought, well, I tweak it a bit, and this was the result! (I told friends that my 'Star Surprise had worked - Star's always surprised by the fact that they did in fact work.')
Sausage Surprise.
Ingredients:
4 sausages, cooked and roughly chopped. (I used gluten free beef sausages with thyme and oregano - got 'em on special.)
1 small tin of chopped tomatoes with juice
garlic to taste
dill tips to taste
1 tbspn Zest Mama Africa seasoning**
3/4 cup uncooked couscous.
olive oil.
In a fry pan over low heat, place the sausages, herbs and tomatoes and mix well. Simmer for ten minutes. Add uncooked couscous, stir through, simmer an additional ten minutes over a very, very low heat. Serve.
Yields 2 servings.

Now, the Zest Mama Africa seasoning. This appears to be a line of herb blends that is local to Australia only, the
web site has details of the stuff they make, but not what's actually in each blend. So here's what is in the Mama Africa blend: corriander, bell pepper, onion, garlic, chilli, cumin, black pepper, ginger and sea salt. I can't recommend the Zest blends to fellow Aussies enough - if you haven't tried them, do, they are really superb. The Mama Africa and the Byblos blends are my personal favourites, but they have so many different blends, it's so hard to choose!
