Swedish pot w/beetroot

It's beetroot season here, and one of our favorite dishes is what we call "Swedish pot", with grated beetroot, carrot, and minced beef. It's one of these simples dishes that show that, sometimes, less is more.

It's a fairly easy dish to make, it has a great taste, and it's possibly even better if you put it in the fridge for a day. Perfect for cooking the night before a busy day.

You need:
  • 1 onion, chopped
  • 400g minced beef
  • 3-4 grated carrots
  • 3 grated beetroots
  • 1 dl tomato puré
  • ½ tsp salt, a bit of pepper
  • 1 tsp paprika
  • 1 tsp curry
  • 2 tbs soy sauce
  • 3 dl water

Fry onion in butter in a large pot. add beef, fry until it's grainy and takes a bit of colour. Add beetroot and carrot, fry a bit more. Add tomato puré, pepper and curry. Let fry for a bit. Add paprika, soy sauce and water. Bring to boil, let boil for 5 minutes or so.

Can be served with just about anything. We usually serve with cooked potatoes or mashed potatoes, but rice, a salad, or just bread is fine as well.
