squid and pineapple

we got two of those little frozen squid, chopped up.



and one fresh pineapple, in cubes (looking back, i would have used a bit less, maybe 2/3)



also (and at this point i forgot to take pics for a moment) 6 cloves garlic and one onion, minced, and one red bell pepper, chopped.

i started off sauteing onion, garlic and bell pepper in a little vegetable oil until everything was starting to soften. i added the squid and fried for a couple of minutes, on medium to high fire. then dumped in the pineapple, 4 tablespoons of fish sauce, one tablespoon of brown sugar and about a half teaspoon of chili powder. everything simmered away until the squid was done (15-20 minutes, i guess, i just made my husband taste) and the liquid was reduced a bit.



served over white rice.



the original recipe suggested celery rather than bell pepper, but we forgot to buy any and bell pepper was what we had at hand. the taste and color complemented the dish nicely, though.
