got in some nice recreational cooking this week. By recreational I mean, cooking for fun, not because you have to figure out what the hell to do with chicken breasts again tonight...
One of my neighbors sent over a basked of these little toms. I wasn't sure what to do wit them, too big for salad, too nice looking to just toss into a sauce pot. So I took off the tops and hollowed them out..
Then I just mixed up a can of chicken ala CostCo, with some mayo, dijon, chopped kosher pickles and super fine minced sweet onion. sprinkle of dill on top. I thought the filling was a little too wet, but reports were that they were really good the way they were.
