Marinated Chicken for the whole family

I've been fairly quiet for ages, but I'm busy designing recipes for Failsafe and South Beach. This came out wonderfully tonight. If you're really amine sensitive, I would just oven bake the chicken and skip the browning step.

Marinated Chicken for the whole family

Suitable for Failsafe and Feingold
Suitable for South Beach, Atkins and other Low Carb Diets

Prep: 10 minutes
Marinate: 45 mins - 12 hours
Cooking: 45 mins (some in the oven)

Serves 4 - 6

1 whole chicken or 3 - 4 lbs chicken pieces (bone in)
juice of a lemon or Citric Lemon Juice (Failsafe replacement)
1 tbs of oil
1 leek, sliced
3 - 4 cloves of garlic, finely chopped
2 tbsp finely chopped parsley
1/4 tsp salt

1. Cut the whole chicken into pieces, skin the pieces the SBers in the house will be eating, ie the breasts. Alternately, use chicken pieces.
2. Mix the rest of the ingredients in a shallow, non-metallic bowl. Put the chicken pieces in the bowl and toss to coat.
3. Marinate at least 45 minutes, turning pieces frequently. Could marinate 12 hours or overnight.
4. Preheat pan to med-high and oven to 350 F/180 C.
5. Line a cookie sheet with alfoil or baking paper, place a cookie cooling rack on the covered sheet.
6. When pan is hot add a little oil to the bottom of the pan if it isn't non-stick. Heat for a minute or so.
7. Place the chicken pieces skin side down or where the skin would be if they had skin in the hot pan, reserving the marinade. Brown the pieces, then flip and brown the other side.
8. When both sides are browned, place pieces skin or original browning side up on the cookie cooling rack on the cookie sheet. Top with marinade ingredients and drizzle the liquid evenly over each piece.
9. Place in oven and cook for 30 minutes or until the juices run clear.
10. Serve with your choice of veggies.
