Spicy Khichdi - Comfort food

After experimenting with various khichdi forms, arrived at one that I liked .. this has become my regular Sunday lunch now :)

1 cup rice
1/2 cup moong dal
3 cups water
1 small potato
1/2 cup fresh peas
1/2 small onion
1 small chilli
2 cloves garlic
fresh coriander
2-3 tbsp coconut oil
spices - mustard, cumin, turmeric pd, garam masala pd
salt

1. Wash moong dal + rice, soak in hot water, keep aside
2. Peel potato, cut into cubes, wash peas, keep aside
3. Chop chilli, garlic, onion, coriander
4. Heat oil in pressure cooker on medium flame, add mustard, jeera (cumin)
5. Once mustard sputters, add garlic, chilli, onion, brown a bit
6. Add potato, peas, saute
7. Add turmeric pd, garam masala pd, saute
8. Add washed lentils and rice, saute, add water, salt, stir
9. Add chopped coriander, and close cooker lid. High flame [3-4 whistles]
10. Open after 20 mins, enjoy!
