What doesn't go better with brown butter?
About a year ago I tried the Pasta with Brown Butter and Mitzha cheese at Spaghetti Factory, and fell in love. Since then I have worked hard to perfect brown butter at home - putting it in everything from pasta sauce to Chocolate Chip Cookies. Then I found a recipe for sugar cookies (Technically shortbread cookies) using brown butter as a primary ingredient and knew I had to try it. I mean what better way to showcase this amazing treat?
They were amazing - like little brown butter cookies... not sugar cookies, not shortbread but Brown Butter cookies... and with their pretty sparkly exterior ring they're perfect for celebrating.
1 1/2 sticks unsalted butter
1/2 cup brown sugar
1 tsp vanilla extract
1 1/3 cups all-purpose flour
1/4 teaspoon salt
Decorative Sugar Crystals (The colored kind you find in your baking aisle)
brown the butter then put back in fridge for 1 hr
cream sugar and butter then add other ingredients
form together into a roll and wrap in waxed paper, back in the fridge for 1 hr
Pre-heat oven to 350
Take out and cut into enough pieces for each color you want to use (So if you have 4 colors you would make 4 large hunks out of your base roll).
Roll each of the smaller rolls into your colored sugar coating the outside rounds completely with sugar.
Cut each log into smaller cookie slices and place onto greased cookie sheets
bake 8 minutes
*These will fall apart in your hands if they have not been allowed to cool long enough, don't panic they do in fact get stronger as they cool.
