Weaves: I'm still trying to figure this one out for my own time period. I'm afraid I can't help too much. There might be useful information in the resources on the Vikings Online site. Also, take a look through Mistress Isabel's site. I don't *think* she'll be at 12th Night, unfortunately, but she's a very friendly person and seems to enjoy when people pick her brains.
You will want linen and wool, though. Those are pretty much definites. The quality of the weave will depend upon the station of your portrayal.
Colours: Here's a dark age colour wheel of dyed wool using, as the site says, authentic dyes from Sweden. Those aren't the only colours available, but it does appear that reds and yellows (in Sweden anyway) were the most easily achieved.
My favourite places to purchase wools are www.fabric.com (they run a LOT of sales) and www.denverfabrics.com; www.fabrics-store.com is great for linen. I've had little luck in brick-and-mortar fabric stores who have a lot of linen-look and nylon/acrylic "wools".
