I have such a love-hate relationship with food. I’ve been vegetarian for 19 years (almost 20), vegan for 6 of those. I never have any intention of eating meat ever again in my life, though I have no issue cooking it for the meat-eaters in my life.

Today's infernal experiments went with a multi-national theme: France, Morocco, Turkey, and Greece: Potato Gratin with Mushrooms and Gruyere (France), Braised Chicken with Dates and Moroccan Spices, Turkish Onion Soup, and Galaktoboureko which is a Greek phyllo pastry stuffed with a custard type filling and glazed (drenched) in a homemade syrup.

For the next installation of my international culinary journey I took my inspiration from Turkey. I made Almond Soup (Badem Çorbası), Potato Cigarette Borek (Patatesli Sigara Boregi), Turkish-Style Sirloin Steak in a Garlic-Fig Wine Reduction, and Honey and Nuts Snow White (Balli Cevizli Karbeyaz).

I've been looking into a lot of ethnic cuisine but without lengthy descriptions it's rather difficult to post those ideas.  Today I experimented with Moroccan cuisine. Just two things this time:

1.) Moroccan Carrot Soup:

I liked this. Perhaps a little less cumin next time. That was the predominant seasoning that hit my palate at first. Would like to bring out the carrots a little more. Nice an creamy. Relatively smooth. I thought it was rather refreshing and went well ( Read more... )
