Unfortunately, my entire collection of BtVS and AtS DVD's were donated to the local library. However, I remember the episode, so will comment from memory as that episode replays in my head.
I watched the episodes in a very odd manner. My first episode was Homecoming, and the Buffy and Cordelia show was my entrance into Sunnydale.
By the time I watched these three episodes, I knew the main characters and how they interacted, but it was great fun to watch their beginnings. Xander's skating into Buffy's life, Willow in her "softer side of Sears" dress, and Giles' book-toting were adorable. "We're all doomed" is the phrase I remember best from "Welcome to the Hellmouth".
I first watched these on the first BBC showing because I liked the film. My first reaction was to quit until Season Five. I was so disappointed! I didn't like SMG or the bumpy vampire faces or the Great Oak himself. I have since changed my mind on all of this - except Angel, who still annoys me intensely.
I think it is unfair to call the first two episodes weak as they have to carry a lot of exposition and world building, but in terms of the show, they aren't great. The Witch is a lot better.
quinara and I watched the eps at the same time and had a live chat, so if you are bored enough to get though 390+ comments rambling about the clothes, living in the 90s and weed lollipops then enjoy: Eps 1x01 to 1x03
We started watching it as a family when the BBC started showing it on Thursday evenings. According to Keith Topping they started on 30 December 1998, nearly a year after it was on Sky and not far short of two since it was on The WB. I had an eight-year-old daughter by my side, except during the scariest bits, and her twelve-year-old sister tended to sit next to her father. Before long we were regularly joined by one of her friends, who was 13. It was very much a family experience from the start for us, and I think I was hooked from the point Darla turned round in game face, though the theme music cemented the deal

I watched Season 2 before Season 1, so I like to think that I'd have been hooked by the opening scene with Darla turning from schoolgirl-to-monster if I hadn't already been by Spike turning from vamp-to-human face in "School Hard". Unexpected Transformations R Us!
Every time I re watch Welcome to the Hellmouth I am totally puzzled by the scene where Buffy drops her bag and a stake falls out and Xander picks it up and say "you forgot your ...er...stake" Why did he call it a stake? If he had no prior knowledge of vampires or how to killing vampires, wouldn't he say "you forgot your...er..pointy stick?" Why use the word stake?
I know this is something stupid but it has always bothered me. *shrugs*

And, yes, they are adorable. Though with occasional disturbing touches.

Angel at this point is annoying. I think he improves a bit. At least DB's acting does. A bit.
