Page 4 is the page where he discusses the fact that scientists analyze food by breaking it down to ONE componant (thats how you do these tests) and that often that misses the bigger picture of how these things interact, change, and combine
his discussion of WHY the "nutrition tests" and surveys are so often useless is also great
