While I'm at it, I'll share another new favorite recipe.
Pistachio-Encrusted Chicken
Chicken strips
1c chopped pistachios
1c breadcrumbs (plain, italian, or other flavors)
1/2c dijon mustard
1/2c honey
2tbs coconut oil
salt &pepper to taste
Preheat oven to 375F. In one bowl, mix dijon mustard, honey, and coconut oil thoroughly. In a separate bowl, mix bread crumbs and chopped pistachios. add in a pinch of salt and pepper. Wash the chicken after it has defrosted (if frozen), dip in the mustard mix, then dip in pistachio mix, making sure to coat the chicken thoroughly.
Place covered strips on a lightly greased cookie sheet and cook for ~20 minutes or until done.
These strips are great to add on pasta or salads, as well as just eating them on their own!
