Missed posting this weekend because rolling closer to the holidays has me busy. But I tried a WW veggie lasagna tonight that had so much flavor, I'm going to post the recipe here.
The cheese is *really* light. That cup of cheese is split between all the servings. I wouldn't do a protein side for dinner if I had a larger portion, though the smaller portion was great for lunch today.
Ooo... definitely going to give this one a try the next time we get eggplant with our produce delivery! It's pretty much my least favorite vegetable, so I'm always looking for tasty ways to prepare it.
I'm sort of like Fenchurche - eggplant not really my favorite, but April likes it and has prepared it in interesting ways, so may be one I let her prepare. What did the recipe give as points, fat grams, etc.?
