European trip with a child

My husband and I are thinking about taking another trip to Europe in the spring, most likely mid-May, if we do it. We have been to various countries throughout Europe on two different trips in the past, but this time, we would be taking our almost 2 year old daughter. We realize that we are not going to be able to move around as much as we normally do and that we will have to slow down a little. However, our daughter is pretty flexible and will sleep almost anywhere and is not on a particular strict schedule of any sort.

Some of the countries we are interested in are:

Greece (particularly Athens) - in the Top 2
southern Spain (like Sevilla) - in the Top 2
Germany
Switzerland
Austria (probably Vienna)
Amsterdam
west coast of Ireland
Hungary (probably Budapest)
possibly other places in England besides London, and maybe even Scotland

We prefer to go to more than one country in a trip. We have typically done 4 cities/countries in the past, though we may cut it down to 3 on this trip. I'm assuming that it will be easier to travel by train with a child, rather than flying, but I don't really know. Regardless, it might be easier to do a trip with cities that are only a train-ride away or a very short flight. Any suggestions on which countries you would feel comfortable taking an almost 2-year old girl? Also, any suggestions you have about travelling abroad with a child in general would be much appreciated!
