JAMAICAN COCONUT PUDDING
Serves 6
1/2 shredded or flaked coconut
1/4 cup dry bread crumbs
1 cup milk
2 eggs
2 tablespoons butter
2 tablespoons sugar
1/8 teaspoon salt
Preheat oven to 350*F (175*C). Put all ingredients in a blender and beat until smooth. Pour into a buttered pie dish and bake for an hour. Serve warm or let cool to room temp.
