CUBAN RED SNAPPER WITH CILANTRO-LIME SAUCE
Pargo con Salsa de Cilantro y Limon Verde

Red snapper, known as pargo, is delicious by itself, but this cilantro-lime sauce bestows a richly pungent flavor that greatly enhances the fresh qualities of the fish. It is equally exquisite over boiled or fried fish.

3 tablespoons butter or margarine
2 garlic cloves, peeled and chopped
2 pounds red snapper or other firm white fish fillets
1 cup cilantro-lime sauce {see below}
1 sweet white Bermuda onion, thinly sliced, for garnish
Fresh cilantro sprigs, for garnish
1 lemon and 1 lime, sliced lengthwise, for garnish

Melt the butter in a skillet and add garlic and fish. Saute until fish flakes when tested with a fork. Do not overcook. Place fish on a warmed serving platter. Pour sauce over fish, or serve on the side. Garnish and serve.

For the cilantro-lime sauce:
Makes about 1 cup

1/4 pound butter or margarine
1 cup chopped onion
3 tablespoons fresh lime juice
1/4 cup Worcestershire sauce
Dash of Tabasco sauce
2 tablespoons chopped fresh cilantro
Salt, to taste

Melt butter and ass the onion, lime juice, Worcestershire sauce, tabasco, cilantro, and salt. Simmer for a few minutes over medium-low heat. Remove to a food processor and blend until Smooth. Serve hot.
