Thursday night I went to Colorado Kitchen with my mother, which is in her neighborhood. It was total comfort food. I had a creamy tomato bisque, followed by crab cakes on a bed of fresh creamed corn and roasted tomatoes. Dessert was homemade pineapple upside cake, all buttery sweet crust and tender cake.

I think the last time I had pineapple upside down cake was when I was a Girl Scout...we baked them in dutch ovens in our campfires. Food brings good memories. :)

What a hoot. I could go there and eat well and still remain ancestrally correct. Well, almost -- I don't see anything that my father's mother (who spoke Serbo-Croatian) would have cooked. Mom's family tree? No problem.

I wonder which nationality produced the bison burger with wheatgrass mayonnaise.

The chef of the restaurant is an African-American who lived in Scandanavia for his formative years. The answer to your question is, who knows?
