I was listening lately to NPR and somone there mentioned how easy rhubarb is to cook with. I have only eaten a rhybarb/strawberry pairing.

The recipe called for blackberries and strawberries, but I used a mixture of blueberries, red raspberries and strawberries instead. I also did not fool with a lattice crust and in the filling used 3 tablespoons ( Read more... )

Yum!

During the winter I like to whip out a five minute cherry pie using premade refrigerated crust, canned cherry pie filling, a package of dried cherries from Trader Joe's and a splash of orange juice.

Now that there's a lot of inexpensive fresh fruit in the grocery store, I need to whip up a couple of fresh pies for my barbecue this weekend. Thanks for the inspiration!

Oh man - that cherry pie sounds really good. I take it the dried cherries soak up some of the liquid from the canned pie filling? My mom used to quick pie like this using pie filling, but it was always runny.

Glad I inspired - wish I was close enough to hit your barbecue, but alas I am working on Saturday, so even am missing anything that might be happening down here.

The vision of you doing anything akin to "whip up" sure has my mind racing here now...and other things - WOOF!

Well, this was just pie. Dinner was black bean soup, platano frito and baked fish with pineapple salsa.

I started making rhubarb pie years ago when Morgan mentioned that he loved it. I do not care for cooked strawberries, unless they are in strawberry preserves, so I used a mixture of rhubarb and apples. It has turned out to be a pairing made in heaven.

On NPR they were talking about a rhubarb, peach, apricot and nectarine pie. I will have to try apple sometime.

I would think that stone fruits would just be too soft. The texture would have to stand up to the rhubarb.
