Grandma Elson's Green Tomato Pickle

Jul 28, 2014 11:20

Well it's been ages since I've posted here.  Lots of changes since my last update.  Still working at BreakAway but after 24 years I moved out of my apartment and bought a house.  It's the one across from Mom's which I had been waiting for.  Mainly moved over to Facebook but glad this is still around.

Anyway I'm planning on making a batch of Grandma Elson's Green Tomato Pickle.  I thought I had posted the recipe here earlier but it looks like I didn't.  This was particularly disappointing since I forgot to check the amount of tomatoes I needed before I turned off my computer this morning but wasn't too worried about it planning to get it from here.  Fortunately I found an email on my work computer with it so I'm good to go.  Still, since I have it I thought I might as well post it so I don't have this problem again:

Grandma Elson's Green Tomato Pickle recipe:

8 qts green tomatoes
           8 cups sliced onions
           1 cup salt
           1 qt vinegar
           4 cups granulated sugar
6 Tbl mixed pickling spices (put in a cloth bag)

Cut the tomatoes and onions into 1/8 inch slices.
Sprinkle them with salt, cover with a plate and let stand over night.
Next morning wash and drain the tomatoes and onions 3 times in cold water.
           Add the vinegar and sugar.
           Put in a pot.
Insert the spices that have been put in the cloth bag.
           Cook for 5 minutes.
Take out the bag of spices and put the green tomato and onion pickles into sterile canning jars.
They should seal as they cool.
