Another recipe since I had been meaning to send this one to my sister for a while. Scanning to a searchable PDF makes this a lot faster though some editing is usually required.
My dad's side of the family is Finnish and his mom used to make a variant of this. I like this one since it's a managable size, especially if you cut the recipe in half. Given that this recipe uses two pans this is really easy to do. There is a definite egg flavor so factor that in when deciding if you want to use syrup, honey, powdered sugar or whatever.

Finnish Oven Pancakes (Krupsua)
1/4 cup butter, divided 2 Tbs. sugar
2 eggs 1 tsp. salt
2 cups milk butter
1 cup all-purpose flour sugar
Preheat oven to 375°. Place half of butter into each of two 8-inch round pans, and melt in hot oven. (Non-stick pans are best.) In a large bowl, beat eggs with wire whisk, and add milk, flour, sugar, and salt. Beat until the mixture is very smooth. Pour the batter into the sizzling hot pans and bake for 30 to 40 minutes. Remove from pans as soon as possible to avoid sticking. Serve with butter and sugar. Makes 8 servings.
