8 hard cooked eggs
1 lb. pork sausage
1/2 c. breadcrumbs
1/4 tsp. paprika
1 slightly beaten egg
Hard cook 8 eggs; cool and shell. Combine the bread crumbs and paprika. Divide the sausage into 8 equal pieces. Mold each portion of sausage around one hard cooked egg. Dip into beaten egg and then roll in bread crumb mixture. Place in a shallow baking pan. Bake in 375 degree oven for 20 to 25 minutes. Makes 8 servings.
I used panko breadcrumbs for a bit more texture and seen others that use crushed up corn flakes or Pepperidge Farms Herb Stuffing Mix that was pulsed in a blender. I also used a sausage with sage in it or you can add other herbs or spices to your liking. Making them is actually fairly easy but if you do a lot then don't do like I did and forget to factor in egg peeling and sausage forming. Even if it only takes a couple minutes per egg that's over 1/2 an hour if you do 16.
