Tri-State Tornado Anniversary

On March 18, 1925, 1:01 p.m., a massive tornado touched down in north-northwest of Ellington, Missouri. The tornado remained on the ground for about three-and-a-half hours. During that time, at least 695 died and 2,027 were injured, mostly in southern Illinois. The tornado moved forward at incredible speeds: 73 miles per hour was its fastest forward speed. During most of the course, no classic funnel cloud was seen, which may have contributed to the high casualties, since most of the folks in the area were pretty weatherwise.

It's raining here. We had planned to go to Costco for our major purchases, such as cat litter. Neil hates loading in the rain, especially since Costco switched from sturdy plastic jugs to flimsy cardboard cartons. Clumping cat litter is especially bad in rain!

Tomorrow's breakfast will be something new: Monte Cristo Casserole. A Monte Cristo sandwich - one of may favourites - is a ham-and-turkey sandwich with cheese that has been dipped in batter and deep-fried. Not the healthiest thing in the world, certainly, but to DIE for yummy. It is often served with jam. A Monte Cristo casserole incorporates several of the features of the sandwich:

Monte Cristo Casserole

Ingredients
16 slices sandwich bread, crusts removed
8 slices deli ham
8 slices deli turkey
8 slices cheddar cheese
6 lg eggs, beaten
3 c milk
1/2 tsp onion salt

2 1/2 c crushed corn flakes (roughly 6 oz. uncrushed)
1/2 c melted butter

Directions

Spray a 13x9 baking dish with nonstick spray. Arrange a single layer of 8 bread slices in the baking dish. Top each slice with a slice of ham, turkey and cheddar. Cover with remaining 8 bread slices.

In a large bowl, combine the eggs, milk, onion salt, and dry mustard; pour over top of sandwiches in dish. Cover and refrigerate overnight or for at least 8 hours.

The next day, take dish from icebox to warm slightly on counter. Preheat the oven to 350 degrees. Meanwhile, in a large bowl, combine crushed corn flakes and melted butter; mix well. Spread on top of the egg dish. Bake at 350 degrees F. until crisp and golden, about 1 hour.

Sounds good to me. Hope Neil will like it. He's "okay" with the French Toast Casserole I make, but the last one I tried, he wasn't too keen on. :/
