We had so much to do this past weekend. Winston butchered 2 hogs, one about 600lbs and another nearly 700lbs. I really wish I had taken some pictures. The process of butchering a hog is very labor intensive! Winston hung it (with chains) and halved it, then quartered it. It's hanging in the walk in freezer now. In a few days, we will have plenty of sausage!
I made lots of organic mayberry jam. The chevre (goat cheese) came out PERFECTLY, and is delicious. I don't think I will ever buy cheese again. Today I am making goat cheese lasagna. Winston bought me a kitchenaid for mothers day (I LOVE practical gifts) and I cannot wait to use it.
I have another doctor appt in 2 weeks. I found out today I have a UTI. I used to get those all the time. Time to drink more cranberry juice! Luckily we caught this one before any symptoms, yay!
