The Thursday Next series (starting with the Eyre Affair) by Jasper Fforde are pretty fun and plot-driven. They will appeal to the English major in you, I promise. The first is all about Jane Eyre and it's a rollicking good time.
The Diamond Age by Neal Stephenson is another excellent read, and one of my favourites. It's a little (ok, a lot) sci-fi, but it's an excellent meditation on education and femininity. Not kidding. You should check it out. Has one of the most endearing female protagonists this side of Pullman's His Dark Materials.
If you're looking for more serious fare, as the above two are pretty lighthearted, you should check out Dan Simmons' The Terror. It's some of the best historical fiction I've read, and about a historical expedition (the Franklin expedition to find the Northwest Passage) that I thought was totally boring until I read this.
Also, if you've never read it, pick up Norman Juster's The Phantom Tollbooth. It's kind of a modern Alice in Wonderland but filled with lots of fun wordplay and language jokes.
