O.K., we have been going back and forth on eggs in the dietary world. The VA has me on a diet. I have a muscular build but my cholesterol is high. I had an appointment with their dietician recently. Towards the end, she asked me, "Are you going to ask me the egg question?" Well, turns out they are good. Besides protein, they provide Tryptophan an essential amino acid for the production of Serotonin. I need that because of my depression. Turns out, it is the sides that go with eggs that need to be curbed, like bacon and buttered toast. So here's my Froached Egg (fry/poached) tip LJ Nation:
Take your favorite frypan, kick the tires and light the fire. I use light olive oil, but it does hiccup when hit with moisture. Set the flame at between medium and low. Have your eggs ready. I crack one against another. Only one breaks. Put them in a little bowl. Then after a minute, slide them into the pan. Let those little darlins fry until they just start to white up. Next, have a shotglass of water ready and the lid. Carefully slide the water in down the side, and then cover. Steam will do the rest. Check them after a minute, and serve when the yolk is to your own pleasure. Wallah! Froached Eggs. Enjoy!!!!!!!!
