I took a picture which I will edit to include later, but it's a casserole, so it's not exactly photogenic.
ONE DISH FISH!
~1 lb fresh or thawed fish fillets, boneless (I used basa)
~1 lb broccoli
~1 c. sliced mushrooms
6 red potatoes, sliced
1 can cream of mushroom soup
~1/2 c. shredded cheddar cheese
bread crumbs
cooking spray
seasoning: pepper, curry powder, chilli powder, or what have you
Preheat oven to 425F. Spray a 2 qt rectangular casserole dish lightly with cooking spray, spread an even layer of sliced red potatoes, and then lightly spray again. (Alternative: grease dish and toss slices with oil or melted butter.) Season generously. Place in oven for 20 minutes.
Meanwhile, wash and chop broccoli into bite sized pieces, chopping the stems and tops separately. Put the stems into a large microwave safe dish and microwave on high 1 minute with about a tablespoon of water, then add the rest of the broccoli and microwave an additional 2 minutes. Do the rest of the prep work as necessary: shredding cheese, cutting fillets into smaller portions (I cut them into roughly fish finger size), opening cans, etc.
When the 20 minutes is up, take the dish out of the oven and raise the oven temp to 450.
Spread the broccoli and the mushrooms evenly over the potatoes. Place the fish fillets evenly across the top. Spread the cream soup over the fish fillets. Shake bread crumbs liberally over the top and sprinkle cheese on top of that.
Place back in oven uncovered for 25 minutes or until fish flakes with a fork.
Serves 4-5, I guess? We had about half left over.

What I liked about this was that the first go round gave the potatoes on the bottom some crispy bits, which I like. More crispy bits, I always say.
I think to do it again that I would season the fish fillets themselves also.
Casa joye is already meatless from now until Easter, and once the fish leftovers are eaten up, we'll be going vegetarian. Either Thursday or Friday will be a big pot o' vegetable soup. The other day will be black beans, tomatoes, rice and avocado. Saturday will be the last leftovers.
I have hot cross buns in the freezer so I will take out at least one for us to split on Good Friday so we can do the rhyme:
"Half for you and half for me,
Between us two shall goodwill be."

Apparently leg of lamb is a good dish to put in the crockpot, so I am seriously considering having it waiting for us when we come back early Sunday morning from the Easter vigil. Then the next day we could eat the lamb cold and make hot side dishes in the oven... maybe baked sweet potatoes and brownies. I saw the idea of wrapping asparagus in bacon on a blog and that sounds amazing too.

Here is the State of the Belly as of yesterday.
The midwife says she is even lower now than she was last time. She also says she thinks the baby will be 8lbs max at birth. Which I am happy about. I want to put these newborn sized items to good use! Plus, y'know, easier labor and all.
I am trying not to be unhappy about the way I look. It won't be much longer now.
