Random post, but w/e...that's kinda what this thing is for- right?
I didn't really know what to make for dinner tonight- i haven't been hungry, but i've been craving a lot of foods that a) aren't that good for me (cheesesticks don't really help out in the energy/ nutrition department) and b) i shouldn't be spending money on SO i raided the fridge to see what there was and ended up making this amazing little meal which tastes AMAZING, looks rather appetizing (magazine ready, if i do say so myself) and is actually mostly healthy. Score. So, small reminder to self: here's the recipe!

1/2 can cannellini (sp?) beans
1 small tomato
1 small onion
1 clove garlic
handful of chopped green pepper
handful of fresh spinach
handful of shredded cheese
dash of salt
dash of pepper
celery salt, crushed red pepper, basil, oregano to taste
tsp of olive oil
tsp of pinot noir

so basically i chopped up the veggies and cooked the beans, tomato, onion, garlic and pepper. I added the spices and olive oil and waited til the mixture started to bubble (more of a simmer than a full on boil), then i added in the wine, mixed thoroughly and added the spinach when the spinach was cooked (about 2 min) i threw in the cheese, stirred until melted and served with triscuits and accompanied it with some of the pinot noir.....looks good, tastes better : )
