We got a bit behind on the massive greens infusion since we didn't cook that much at the beach last week and came home to picking up Week 2's CSA. The fridge has been full of greens and not much else it seems like. Which is an issue - adults eat salad - kids will eat lettuce but won't eat some of the other things that make it more of a complete meal (hard boiled eggs, marinated cauliflower, spicy dilly beans, etc...) I've been cooking and washing and giving away and I got home tonight and G. wanted salad.
It turns out we are down to 1 head of romaine, just enough kale* for Be Bop Bap (see Cookus Interruptus), 4 heads of bok choy, 1/2 bunch of chard, handful of tiny radishes, 1-2 meals worth of peas (about 1/2 the share + our garden's harvest) and a few scallions** and garlic scapes. I think if I work a bit at including greens at breakfast we will be greens free by Wed. afternoon just in time to pick up Week 3. Yay!!!

*The kale is from our garden because having a CSA just isn't enough greenery.
sometimerose is correct it is an awsome kale dish and I've made it twice in 24 hours and we still don't have any in our house!!!
** Pablo and Esther keep telling me these are bunching onions. I think they've even tried to tell me the difference between such and scallions and green onions. They look and taste alike to me so whatever....
*** If anyone cares I finally remembered what I did w/ the choy last year (since I forgot to put it into Thur's dinner stir-fry.) Saute large bok choy and onion chunks until soft. Dump on top of them cocount milk, lime juice and fish sauce. You can put a little and have it as a sauce or use more +/- stock/water and have something similar to Tom Kha. Of course you can add more Tom Kha bits (ginger/galanga, cilantro, chili oil, etc...)
