Throw roughly equal quantities of the following into a blender:
Fresh tomato
Tinned tomato (drained)
Tomato paste (triplo contrentrato)
sun-dried or semi-dried tomato
red onion
Add to taste:
Balsamic vinegar
Garlic
Basil
Oregano
Black and/or green peppercorns
Soy or worcestershire sauce
Sweet chilli sauce
Blend it until it is blended.
Suit pizza toppings, parmagiana, pasta sauce etc.
