I am obsessed with squash soups this Fall. I've always liked squash soups - Carlos makes an excellent winter squash soup - but suddenly this particular Fall I'm all about squash soups. Right now I'm making the same apple-squash soup I made two weeks ago, but with a butternut squash instead of an acorn squash. And last week I made a delicious pumpkin sage soup. I make them, then freeze half in individual Gladware containers. Right now our freezer has several squash soups, plus some lentil soup, plus a chicken and rice soup. It's much cheaper to make a few big batches of soups per week and alternate having them with pasta (which is cheap and easy to make), and then have all this leftover soup for nights when I can't even be bothered to boil the water for the pasta, than to make different entire meals all week long.
I have to remember to label the Gladware, though, because once frozen all the soups sort of look alike.
Anyway. Just wanted to share that. Squash soups are my current obsession. And this one I'm making tonight, the one that set it all off two weeks ago, is so delicious even when it's reheated that I want to swim in it. Mmmm. It's just the perfect food for the particularly cold and wet Fall we're having.
