Lunch laziness still yielded yummy things

This week's lunches consist mainly of sandwiches or dinner leftovers with carrot snackage, but I also wanted to use up some apples that I got on sale the week before. I really like applesauce, but the only prepared stuff I could find in a jar (to  distribute among my little bento containers) was runny and managed to still leak through my (almost) leak-proof containers.

So I experimented and came up with a really simple and yummy recipe for cinnamon applesauce (pictured bottom left, obviously).




Ingredients:
9-10 apples (I got the small ones that come in totes - if you get the larger/regular sized apples, you probably need only 6-8)
2 cups water (approximate - enough to cover all the apples)
1/3 cup granulated sugar
1/4 brown sugar
1 tsp. cinnamon
1/4 tsp. ground cloves

1. peel and core apples. Cut into wide slices (I used a circular apple cutter). To keep them from browning while you're cutting, you can place them in cold water with some lemon juice, and then drain and rinse the apples when you're done cutting.
2. Combine apples and all other ingredients in a Dutch oven. Heat until boiling
3. Reduce heat. Cover and simmer for 8-10 minutes
4. Remove from heat and allow to cool for a few minutes. Drain approximately 1 cup of the liquid (or more if you want thicker sauce). Mash with a potato masher until you get the desired consistency.
Makes about 6 servings.

Aside from cutting up the apples (which I can do pretty quickly), it took very little work, and I was able to keep the apples chunky - the way I like applesauce.  Win!
