I took a specific gravity reading tonight to check on how the fermentation is coming along. My OG was 1.073 and the reading I took tonight is at 1.022. That calculates out to a current ABV of %6.681. Fermentation still has a ways to go and the brew taste a bit sweet still, indicating that there are still sugars yet to ferment. I'm not sure what the final ABV will be, but it will probably settle around the %10-12 range. The flavor profile is coming along nicely. I could taste the esters and phenol tones and it had a bit of banana and frutiness to it.
