You know how people go on about fresh-baked bread straight from the oven, and blah blah home-cooked goodness? THEY ARE TOTALLY RIGHT. Seriously. I have the most amazing loaf of bread sitting on my counter, and I made it myself. with the kneading and the rising and the whole nine yards of awesome goodness. I can't not even tell you.

How have I lived my entire life without ever having had bread baked in a house is my question. It's...it's just so good. and satisfying! I made it! me! It is ridiculously filling and fantastic, and everyone who has an oven should make their own bread. I didn't even HAVE an oven a year ago! And I was perfectly ok with that. But now!

And fennel seeds! I made this rub for the pork chops I was having, right? and the first couple of times I made it, I didn't have the fennel seeds, and I was like "what's the big?" and used more thyme instead, but when I was at the store (where I bought the yeast for the bread), I was like "why not give it a try?" and it was awesome. much more subtle flavor than the thyme, which was nice. I mean, I've never given fennel seeds a second thought! and now I'm contemplating if they kept the pork more juicy or if that was how long it was in the oven the first couple of times.

If i had more than two square feet for both the dirty and clean dishes, things would be perfect.

sigh. it really is good bread.
