I'm about to make homemade lasagna. When I say homemade, I mean I'm picking the herbs from my garden and just finished making the mozzarella cheese with my specially treated lactose-free skim and whole milks. If only shredding homemade mozzarella wasn't so tricky.
It takes a lot of time and advanced prep, but I'm so excited. I haven't had Chi-friendly-edible lasagna in ages. I almost made the ricotta from scratch, too (I have the recipe for that, too), but trying to hold another two gallons of milk in the crowded fridge is difficult enough. Ricotta isn't too hard to treat with lactose powder in advance, although it doesn't absorb it as well as cream cheese. This meal will end up being at least 90% lactose free in the end, good enough for me with some Lactaid pills.
I have really been craving beef lately, which is so incredibly odd for me. I used to pretty much hate the taste of most beefy things. I still can't stand hamburgers. Yet in the past week I've gone out of my way to eat steak fajitas and now I'm making beef lasagna. I used to hate meaty sauces in my Italian food! Obviously, baby wants more iron, not just protein.
