This week’s recipe rally focuses on kids’ recipes.

Of course, my kids are teenagers now and can pretty much make anything they like on their own. It’s been quite a while since I had smaller kids to work with, but homemade pizzas were always a big hit at my house. Still are. But there were times when I just didn’t feel like making a homemade crust from scratch….or didn’t have time….or didn’t feel good….AND MY HUNGRY KIDS WANTED PIZZA! Like, yesterday, Mom!

So I came up with something so simple, even smaller kids can do it with supervision. Not only do kids love making their own personal-sized pizzas, but they are as nutritious as you care to make them and frugal as well.

INGREDIENTS:

Bread (tortillas, leftover hamburger or hot dog buns, english muffins, brown ‘n’ serve rolls, texas toast or garlic toast…..we’ve used them all!
Pizza or spaghetti sauce (I’ve used both)
Toppings of your choice (always cheese and pepperoni for us, but whichever meats and/or veggies your kids like on their pizza is good, of course!)

INSTRUCTIONS:
Preheat oven to about 375.
Lay bread out on pizza pan or cookie sheet.
Spread with sauce.
Pile on toppings.
Toast for about 8-10 minutes.

And , voila! With a quick side of salad, or fresh, frozen, or canned veggies, dinner is served!
