Shawn Colvin's cover of tenderness on the block is the one that leaps to mind.

Zach LOVES the great big sea cover of end of the world as we know it

Lots of people love the breathy covers of hallelujah, i'm personally not a fan.

Tenderness: I was not familiar with the original, so I am listening to that now.
I had forgotten about that GBS cover. We even have that!.

I think that the Leonard Cohen version of Hallelujah is a good example of a good song that did not go far enough, and the Buckley version is better... but yes, I am a little tired of that interpretation right now as well.

Then you need John Cale's version of Hallelujah, which is the one that Buckley based his on - and I think is far better than Buckley's, Cohen's original, or any. Just piano and voice, but oh my god is it good. From the album "I'm Your Fan," which consists entirely of Leonard Cohen covers, and well worth getting in its entirety.

I'd love to know what's on your list. Off the top of my head:

I enjoy Tori Amos covers, especially I'm on Fire and Vincent. I adore Ani Difranco's cover of Most of the Time.

For less female angst, I also like the Gaelic Storm rendition of Leaving on a Jet Plane. Dave Matthews' In My Life, though it's mostly made interesting by his different voice.

Also this version of Desperado gives me chills.

ETA: Cowboy Junkies' Sweet Jane might have been overplayed but I like it nonetheless.
