Today is warm and humid.
Then it got hotter and stiflingly humid. The scattering of rain in the afternoon didn't really help, just made it stickier.
So I stood in the kitchen, sweat dripping, cooking for the next couple of days.
I made a pasta with chicken. Tomatoes and shallots from the garden, grated zucchini(squeezed and drained of excess juice), chopped chicken thighs, bacon dice (fried separately 'til crisp and drained), garlic, onion, garlic chives, and a extra jar of Barilla's tomato sauce with ricotta. Mixed with cooked, drained pasta, to be served warm, not hot.
And I made a chicken salad. A couple of chicken thighs poached and shredded when cool. Dressing of low-fat plain yoghurt, soy sauce, red rice vinegar, sesame oil, lemon juice, salt and pepper. Mixed with the chicken, blanched lengths of garlic chives and diced Lebanese cucumber, then layered in a large bowl with torn iceberg lettuce for the crunch. Covered and into the fridge to meld flavours.
