Burritos
I finally made the Black Bean-Sweet Potato Burritos. They were a lot of work (I never appreciated how much work goes into most Mexican food), but they were delicious. My system probably is in shock from all the healthy food. I put too much filling in the burrito and did a lousy job of rolling it, so I need to review my instructions before I assemble the rest of the burritos.
Earlier, I had read a New York Times article about a racist incident at a high school, and I had some thoughts about it vis-a-vis the college for which I work, which has a majority African-American student body. But I'll write it tomorrow. I'm going to assemble the burritos, clean up, and crash. x-posted from Dreamwidth
