I think my favourite dinner has been replaced. Tonight it was poached wild Alaskan salmon and sauteed asparagus all served with hollandaise sauce. Cranachan for pudding. (that's a traditional Scottish dessert of raspberries, honey and whiskey cream, and toasted oats.
Oh, and the hollandaise was perfect this time. perfect. with lemon juice and white pepper, barely thinner than mayonnaise, and exquisitely moreish.
edit: Chateau d'Aqueria rosé (AOC from Tavel) was amazing and perfect with dinner.
