My mom stores her potatoes and onions in the root cellar under the house. It is cool and has sand but I am not particularly sure if the sand is required. They stay good for a long time, but it may depend on your humidity levels.

Winter squash (butternut, acorn, pumpkin,) will keep for quite awhile in cool dry place (basement or attic).

Potatoes, onions, carrots, turnips, beets, parsnips keep for a long time in a cool moist place (like your fridge or basement maybe).

Most of the above if in good condition and stored properly will keep until Thanksgiving.

Congratulations on canning applesauce! Applebutter is basically thick sweet spiced applesauce. Jams with reduced sugar is pretty easy to make, give it a try next year when there is fresh fruit about. Worst case is that you end up yummy fruit sauce (great on ice cream) or you can add pectin and try again.

I have a recipe for crockpot apple butter somewhere that I can give to you if you want. I have a half bushel of McIntosh from when we went picking two weeks ago that I planned to turn into butter and can this weekend.
