Canning

I spent some of Saturday afternoon with my big bag of apples so that I could get some cut to be frozen for later pies, and some made into applesauce. Success! It tasted very good and I got 5 jars of it canned. The process was definitely awkward, and I did get some ideas of ways I'd like to do things differently, but I'm proud that I finally managed to give it a try. We still have a good deal of apples left from the bag; I want to flip through my cookbook and see what else we can make with them easily with a few other ingrediants we'd need to pick up (maybe apple butter?).

We went to the farmer's market after ballet class to pick up some fall bounty in prep for the closing of the market later this month (11/1). There's a woman that makes jams without added sugar (or if its added, there is much less than the supermarket stuff) so we picked up a few to get us through the off season (pairing that with some homemade apple butter, perhaps we'd be good for the off season). I also have a huge butternut squash and some turnips to do something with - possibly to can or freeze for Thanksgiving?

We host Thanksgiving dinner each year and have ordered our tukey from the meat CSA. Wouldn't it be cool if a lot of the other ingrediants could be from local farms too? I'm not sure how potatoes would store down in our basement for a month. I'll definitely be flipping through the canning cookbook for some ideas.
