I made flan today, will find out how it is tomorrow. I've never had it, had first read mention of it in a Harlan Ellison story where a unicorn ate it from a Limoges dish.

I'm finding that things that seemed horribly difficult to do are not, so much. The cheesecake was almost stupidly simple, the flan not scary except for caramelizing the sugar, and that you just have to watch. I don't have the bake time nailed down yet, that will come.
