Mayan Wonder Bars

1/4 tsp. cardamom powder
1/4 tsp. cinnamon
1/2 cup maple syrup
1/2 cup brown rice syrup
1 1/2 cups almond butter
1/2 cup quinoa, toasted
1/2 cup sunflower seeds
toasted 3/4 cup pumpkin seeds
toasted 1/4 cup hemp seeds
1/2 cup pecans or macadamia nuts, toasted

Preheat the oven to 350°F. Add the spices to the maple syrup and rice syrup in a large mixing bowl and mix well. Add the remaining ingredients and mix well. Spread in a well-oiled 9-inch-by-13-inch casserole dish and bake until golden brown, approximately 15 minutes. Allow to completely cool before slicing

*dont skip the cardamom powder if at all possible...it really gives a great taste...if you needed to though, i think you might be able to substitute nutmeg...and the brown rice syrup? tasty stuff man, lightly sweet and a little salty, and youre like, woah, this is brown rice and water?... i know a lot of this stuff is like, huh? where do i get that? but i found it all at the mustard seed. it makes a pretty decent size batch with small amounts of ingredients and they arent something youd plow through in a day. sweet enough to conquer a sweet tooth, but i dont think they trigger that *must have more* mechanism, and theyd probably be great for hiking, camping, outdoorsy sporty power food..
the only adjustment id make is that i might actually cook the quinoa a little bit, rather than just toast it...perhaps i didnt toast it long enough, or the right way, but i found the grains to be really hard still...maybe soaking? im not sure...
all in all, a really great recipe and ill make it again! they kept me away from the break table and the junk foods at work!
