Cinnamon Apple Cake

1 3/4 cups sugar, divided
1/2 cup stick margarine or butter
1 tsp. vanilla
6 oz. (3/4 cup) light cream cheese, softened
2 large eggs
1 1/2 cups flour
1 1/2 tsp. baking powder
1/4 tsp. salt
2 tsp. ground cinnamon
3 cups chopped peeled Rome (or other) apple (about 2 large)

Preheat oven to 350*

Beat 1 1/2 cups sugar, butter, vanilla and cream cheese at medium speed with a mixer until well-blended.  Add eggs one at a time, beating well after each.

Combine dry ingredients (except cinnamon and remaining sugar).  Add to creamed mixture, beating at low speed until well-blended.

Combine 1/4 cup sugar and cinnamon.  Mix apples with 2 Tbsp. cinnamon-sugar, then stir into batter.  Pour into a 9X9" cake pan coated with cooking spray.  Sprinkle with remaining cinnamon-sugar mixture.

Bake at 350* for 1 hour and 10 minutes, or until a toothpick inserted in the center comes out clean.  Cool completely on a wire rack; cut using a serrated knife.

*this is a Cooking Light recipe, but it is at least 10 years old, and I couldn't tell you where in Cooking Light it came from...*
